I think we all can agree: Fall is the time for whipping up apple pies (in fact, we already shared our favorite vegan apple pie recipe several weeks ago). And when it comes to breakfast, a bowl of warm oatmeal almost always hits the spot. So we decided: why not combine the two?

That's how our delectable recipe for Vegan Apple Pie Oatmeal was born! This is subtly spiced, warm, comforting, and indulgent...almost like a dessert (without making you feel like you just ingested a pile of sugar). This is the kind of breakfast you can feel good about treating yourself to on the daily.

30-Minute Vegan Apple Pie Oatmeal

Ingredients

  • 2 cups raw oats
  • 4 cups almond milk
  • 2 large apples (variety of choice; we like Gala or Red Delicious)
  • 3 tablespoons vegan butter
  • 1/3 cup brown sugar
  • 3 teaspoons cinnamon
  • 1/2 cup chopped walnuts
  • 1 tablespoon white sugar

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. In a large pan over medium-low heat, combine raw oats with almond milk and cover. In a separate saucepan, melt down three tablespoons of vegan butter. Slice two apples. Once the butter is melted down, add the apples. Cover with a lid and begin to cook down, about 5-7 minutes. Once the apples have softened and begun to brown, sprinkle with 2 teaspoons cinnamon and 1/3 cup of brown sugar. Stir and continue cooking until the sugar has dissolved into the butter, forming a kind of spiced caramel.
  2. Lightly toast the walnuts in a skillet over medium heat, stirring frequently; once ready, the nuts will be aromatic and lightly browned. Remove from the heat immediately to avoid burning.
  3. As the oats begin to absorb the almond milk, continue to stir them frequently. Once they have mostly absorbed the milk, add the cooked apples and toasted walnuts and fold in.
  4. Grease four ramekins with vegan butter and divide the cooked oats with apples. Whisk 1 teaspoon cinnamon into the white sugar and sprinkle evenly over the oats. Bake in the oven for 10-15 minutes, until the sugar has begun to grow golden. Enjoy!

Additional Notes:

Pro Tip: Feel free to swap walnuts for pecans to heighten the fall flavor!
