For some, this beverage—which signals the start of a seasonal frenzy—is loathed; for others, it's warm and nostalgic. Whatever your stance on this (somewhat) controversial drink, it's undeniably delicious when made from scratch! That's why we're excited to share our ultra-easy recipe for a 5-minute Vegan Pumpkin Spice Latte.

This drink is subtly sweet, packed with pumpkin flavor, and it'll warm you right up! You'll be reluctant to return to the pre-made option after starting your morning with this beverage.

Homemade Vegan Pumpkin Spice Latte

Ingredients

  • 6 oz unsweetened brewed black coffee (pumpkin spice if available)
  • 2 tablespoons canned pure pumpkin
  • 1/4 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • 1/2 cup almond or coconut milk

Instructions

  1. In a small saucepan over medium-low heat, place canned pumpkin, maple syrup, and cinnamon. Whisk together until the mixture begins to bubble, stirring frequently to avoid sticking. Add almond or coconut milk and continue whisking vigorously, until milk is simmering and slightly frothy.
  2. Add mixture to a blender and blend on high until the liquid is smooth, being mindful of the heat; once blended, the mixture will no longer be frothy. Pour into a 12-oz mug.
  3. Brew 6 oz of unsweetened black coffee (a single-serve coffeemaker, french press, or leftover from the pot are all great options). While the coffee is hot, pour into the mug with the pumpkin mixture and stir. Garnish with your favorite vegan whipped cream and a dash of cinnamon. Enjoy!
